The door opens all morning
A cold room that gets used is a different load than a box that stays shut. Product, door time, and insulation change the size. We measure the box. We do not size it from the room around it.
The condenser has to live somewhere
The evaporator goes in the cold space. The condenser needs air, a place to reject heat, and a path that is not dumping that heat into the prep area. If the site cannot do that, a different layout gets quoted.
